Young scientists demonstrate their developments at Agroprodmash 2020
Scientific and Practical Conference "Young Scientists' View on the Food Market Development: Quality, Preservation, Benefits" was held by the Confectionery Branch of the Gorbatov Federal Research Center for Food Systems of the Russian Academy of Sciences (VNIIKP) at the Agroprodmash 2020 international exhibition.
"It is no coincidence that the scientific and practical conference of young scientists is held exactly within the framework of the industry exhibition "Agroprodmash", as the main result of any scientific research is the implementation, - Oksana Rudenko, VNIIKP Deputy Director for Scientific Work, said opening the conference. - At the exhibition there is an opportunity to get acquainted with the latest trends of modern industrial equipment, as well as to show their developments and implementation results directly to the manufacturer.
Maksim Osipov, VNIIKP Interim Director, who recently headed the Institute's Council of Young Scientists, addressed the conference participants with commencement speech. He told about the activities of VNIIKP, which since 1932 has been engaged in fundamental, applied and experimental research in the field of technology and confectionery production.
Assessing the state of the confectionery industry, Maksim Osipov noted that the market of confectionery products is very complex, with high competition. According to expert data, in recent years, the total volume of this market has increased, and the share of confectionery products in the total volume of food products today is 8-10%.
The participants of the conference considered aspects relevant to the bakery and confectionery industry, such as quality, safety, benefit. Scientific reports were devoted to new technologies for the production of confectionery products and bread, the problems of safety of confectionery products, promising types of raw materials for their production, the need to comply with standards, health and medical nutrition, quality and safety of food packaging and many other industry issues.
Young scientists, post-graduate students, laboratory researchers of different subdivisions of the Gorbatov Federal Research Center for Food Systems of the Russian Academy of Sciences presented their developments and projects. Among them are: Federal Research Centers of Confectionery Industry, Food Additives, Starch Products, Baking Industry, Canning Technology, Refrigeration Industry, as well as K.G. Razumovsky Moscow State University of Technology and Management.
